I was not sure whether I would like the taste of carrots in a cake. I have never tried it before and would not dare eating a vegetable cake! Till the day I decided to try it. But not only that- I wanted my first try ever to be a home made cake. I was imagining that it will be moist and sweet. I was not sure for the texture though. My recipe is a result of hours of reading in different cook books and internet cooking pages. I have checked old issues of Good Food Magazine and at the end my recipe ended up as following:
Ingredients:
– 200 g peeled carrots
– 200 g brown sugar (I used Muscavado)
– 200 g white flour
– 1 tablespoon bicarbonate of soda
– 2 tablespoons of cinnamon
– the zest of one orange
– 2 eggs
– 150 ml of sunflower oil
Preparation:
In a large bowl whisk the eggs. Add all the ingredients but the flour. Whisk well and then add the sifted flour. Preheat the oven to 180 degrees and pour the ready mixture into a 18 cm baking tray. Bake for approximately 30- 40 minutes.
