The traditional Italian tomato salad with bread, also know as Panzanella could be described with one word only- mouthwatering. Imagine the taste of delicious and juicy tomatoes, the sweet taste of red onion, the freshness of fresh picked basil all this tossed with the exotic taste of pomegranate sauce in which your bread will soak to perfection. In the original recipe the salad is prepared with balsamic or white vinegar, but my idea was to add some exotic note which will still keep the original taste and at the same time will give the desired flavor.
Ingredients:
– 1 kg tomatoes
– handful of fresh basil
– 1 small red onion
– 4 wholegrain toast
– 1 tbsp pomegranate molasses
– 2 tbsp white vinegar
– 2 tbsp olive oil
– salt
Preparation:
Cut the tomatoes and onion and add the basil. Season with dressing prepared from the molasses, oil, salt and vinegar. Cut the toast on cubes and mix with the vegetables. Usually the recipes is with old bread, but for mine I used toasted bread. Serve cold and enjoy 🙂
