This recipe is inspired from a new restaurant that I tried the other day with my friends. The original recipe was with pumpkin, spinach and nuts. However I decided to make it with barley as it is healthy and you can eat the salad as a light dinner. Barley is one of what they called- Super food. It helps for the digesting, it prevents diseases like atherosclerosis, heart attack, lower the risk from Diabetes type 2 and to regulate naturally you blood pressure. All of this with combination with other well know super foods like pumpkin and spinach made one very good recipe for a healthy salad. I hope you will try it and enjoy it.
Ingredients:
– 300 g pumpkin
– 150 g barley
– handful of spinach
– 60 g blue cheese
– canola oil
– malt vinegar
– salt
Preparation:
Boil 500 ml of water and cook the barley for about 30 min. The water will reduce and make sure that you add more until the barley is soft and cooked. Once it is ready drained from the water and wash it with cold water. Drain again and leave it on a side. Peel the pumpkin and cut into cubes. Boil for 10 min. Drain the water and add to the barley. Cut the spinach leaves and add them as well. Season the salad with oil, malt vinegar and salt according to your taste. Serve the salad into the plate and top with blue cheese.
