Crunchy iceberg salad with, courgettes, avocado and hazelnuts

Winter is  close to its end and soon the weather here in Dubai will be again summer and sunny. For all of us its time to start taking care of ourselves and be fit and slim. After all of this baking for the past few months I definitely need a break. This is why my dinner is more often just a salad. But I can`t go to bed hungry and craving food, so I decide to spend more time preparing really good and healthy salad. I used avocado instead of mayo, egg for proteins and nuts for good fats. I can guarantee you that you wont be hungry after this salad and in the same time you wont feel guilty. Enjoy the recipe below:

FOR TWO PORTIONS:

– One small iceberg lettuce

– 2 cucumbers

– 3 small courgettes

– 2 eggs

– 100 g white cheese (I used white Bulgarian cheese, which I was very happy to find on the local market here. You can replace it with Mozzarella)

– 1 avocado

– 100 g hazelnuts

– white vinegar, olive oil and salt for seasoning

Preparation:

Cut the courgettes into thin slices and bake for 1 min on each side in a hot pan. Do the same with the cheese (do not do this if its a mozzarella cheese). Poach two eggs and leave them on a side. Chop the lettuce roughly and season with the oil, vinegar and salt. Separate it between two plates. Chop the cucumbers and add them to the salad. Putt all the ingredients together and then top with the poached egg.
