Mini pizza bites with sweet tomato sauce, mozzarella cheese and pepperoni

This recipe is an interesting twist of the well know pizza. Well it actually has nothing to do with the real one, except the taste. I like when the pizza is simple and with few ingredients only. With only three (but good quality) products you can make this bites and enjoy the well know pizza taste. I baked two trays of it and they all finished withing an hour. I took my time to make them small and they all look cute and tempting at the end. This recipe require a bit of time since you have to make the rolls, then freeze them for half an hour. For the baking itself you don`t need more than 5-6 minutes though. Again I used ready puff pastry (what a blogger!), home made (this is for real) sweet tomato sauce, shredded mozzarella cheese and classic pepperoni. You can of course prepare it with your favorite toppings, but my advise is to use a limited number of it since you don`t want your rolls to fall a part while baking. I want to point also that the part with the freezing the ready rolls is a mandatory in order to avoid melted cheese and falling apart bites (they will be still good to eat, but definitely not that good to present to guests).

Ingredients:

– 1 small package of square puff pastry

– 100 g tomato puree

– 1 tsp white sugar

– 2 tbsp chili ketchup

– 100 g shredded mozzarella cheese

– 100 g pepperoni

Preparation:

Unfreeze the pastry so you can roll it. Mix the tomato puree, the white sugar and the chili ketchup  and apply on one sheet of the pastry. Place one slice of the pepperoni (mine was big enough to cover the whole pastry sheet) and the mozzarella cheese. Roll the pastry sheet and place on a tray big enough to put in the fridge. After you roll all of the pastry freeze them for about 20 minutes to half an hour. Preheat the oven to gas 8. Cut the frozen rolls into 3 and place them into a baking tray. Bake for not more that 5-6 minutes. Enjoy!IMG_20140207_215000
