Vegan beetroot burger

Eating more plant base meals is my aim for months now. I discovered a whole new world of very fragrant and colorful foods, that are usually much cheaper and easier to cook. The recipe today got me really excited to try as I had never had beets in a burger or even roasted. I regret not trying it before. Roasted beets are sweet and earthy, but without the striking taste that some people don`t like. I also made vegan mayo to go on the bun, some mashed avocado with added lime juice and baked sweet potatoes. To convince my husband to eat it I put fresh chopped parsley which he adore. Win win!

INGREDIENTS for 4 burgers

  • 400 g beetroots, peeled and chopped
  • 1 cup quinoa
  • 1/4 chopped onion
  • 2 gloves chopped garlic
  • 1 tbsp oil
  • 3 tbsp breadcrumbs plus extra for dusting
  • the juice from half lemon
  • salt and black pepper to taste
  • 1 tsp cumin powder

To serve:

  • 1 big sweet potato, peeled and sliced into chips
  • oil to bake
  • 1 ripe avocado
  • the juice from 1 lime
  • handful fresh chopped coriander
  • vegan mayo
  • 4 buns

PREPARATION

  1. Place your beets in a tray with a spoon of oil and bake at 200 for 20-30 minutes
  2. Do the same with the sweet potatoes (I baked in the same oven as I have space)
  3. Boil your qуinoa
  4. Take the roasted beets and mash them using a hand blender or kitchen aid
  5. In a big bowl mix beets, quinoa, onion, garlic, oil, spices, lemon juice, and breadcrumbds
  6. Form 4 big burgers and dust each one in breadcrumds
  7. Place on a baking tray and bake for 20 minutes
  8. Mash the avocado and add the lime juice
  9. То serve cut your bun in half, spread mayo on the two sides put coriander, the burger, avocado and sweet potatoes
