Chili con carne is proper comfort food. It doesn`t require any special ingredients and almost no cooking skills. It also is one of this dishes that you can just let it cook on its own. I like to add few bits of dark chocolate at the end of the cooking process. It is then when a normal chili turns into this velvety and rich dish, that the whole family would love. Best part- it is even better on the next day 🙂
INGREDIENTS
- 500 g minced beef
- 1 onion
- 1 garlic clove
- 500 ml canned tomatoes
- 2 cans kidney beans
- 250 ml water
- 1 cube veggie stock
- 1 tsp cumin powder
- 1 tbsp dry mustard
- 1 tbsp sweet paprika
- 1 tsp chili flakes
- 1 tsp sugar
- 1 tbsp HP sauce
- 1 tbsp Worcestershire sauce
- salt and pepper to taste
- 3-4 tbsp oil
- 2-3 blocks dark chocolate
To serve:
- avocado
- mature cheddar
- sour cream
- boiled corn
- coriander
- rice
- jalapeno pepper
PREPARATION
- Chop the onion and garlic. Saute with oil for 2 minutes in a big Dutch oven or similar pot
- Add the mince and spices and cook for 3-4 minutes
- Add the tomatoes, beans, water, veggie stock and sauces
- Cook for 45-60 minutes or until the chili gets thick and slightly mushy
- Add the chocolate and stir well for a minute
- Serve your chili with rice and your favourite toppings
