Gazpacho

The heat has seriously came into our lives this week. And as I have a bit of a tomato obsession these days (check my fresh tomato tart here) I searched for a good classic gazpacho recipe. I found this one here and to me it sounded delicious enough to give it a try. It is simple, quick and oh, so good! I changes the quantities a bit, to suit my taste. You can do it too 🙂

INGREDIENTS

  • 4 ripe tomatoes
  • 1  red pepper
  • 1  peeled cucumber
  • 1 red onion
  • 1 garlic clove
  • 3 tbsp olive oil
  • 3 tbsp vinegar
  • 1 jalapeno (seeds removed)
  • Salt and pepper to taste

PREPARATION

  1. Chop all the veggies into big chunks.
  2. Blend until smooth
  3. Season with oil, vinegar, salt and pepper
  4. Keep in the fridge or serve with ice cubes
