The heat has seriously came into our lives this week. And as I have a bit of a tomato obsession these days (check my fresh tomato tart here) I searched for a good classic gazpacho recipe. I found this one here and to me it sounded delicious enough to give it a try. It is simple, quick and oh, so good! I changes the quantities a bit, to suit my taste. You can do it too 🙂
INGREDIENTS
- 4 ripe tomatoes
- 1 red pepper
- 1 peeled cucumber
- 1 red onion
- 1 garlic clove
- 3 tbsp olive oil
- 3 tbsp vinegar
- 1 jalapeno (seeds removed)
- Salt and pepper to taste
PREPARATION
- Chop all the veggies into big chunks.
- Blend until smooth
- Season with oil, vinegar, salt and pepper
- Keep in the fridge or serve with ice cubes
