Green beans with tomatoes

This is a very easy recipe for a quick lunch or a side dish if you want. I like how easy it is and has just few ingredients. I like to eat this dish with nice sourdough bread and feta cheese.

INGREDIENTS:

  • 3 cups long green beans
  • 1 cup long white beans
  • 1/2 onion, chopped
  • 2 cups strained tomatoes
  • 2 cups water
  • 1 garlic clove
  • 1/2 tsp cumin powder
  • 3 tbsp oil
  • salt and pepper to taste
  • coriander to serve

PREPARATION:

  1. Start by washing and cutting your beans in half
  2. Saute the onion and garlic for a minute and then add the beans
  3. Cook for couple of minutes and add the tomatoes, water and spices
  4. Let cook for 15 minutes or until the beans are cooked but still have a bite to it
  5. Serve with freshly chopped coriander
