This is a very easy recipe for a quick lunch or a side dish if you want. I like how easy it is and has just few ingredients. I like to eat this dish with nice sourdough bread and feta cheese.
INGREDIENTS:
- 3 cups long green beans
- 1 cup long white beans
- 1/2 onion, chopped
- 2 cups strained tomatoes
- 2 cups water
- 1 garlic clove
- 1/2 tsp cumin powder
- 3 tbsp oil
- salt and pepper to taste
- coriander to serve
PREPARATION:
- Start by washing and cutting your beans in half
- Saute the onion and garlic for a minute and then add the beans
- Cook for couple of minutes and add the tomatoes, water and spices
- Let cook for 15 minutes or until the beans are cooked but still have a bite to it
- Serve with freshly chopped coriander
