Leeks, Parmesan, tortellini and bacon soup

if you are looking for a cosy and fast soup to make tonight- this is your recipe. I would say it`s more like a winter season soup, but hey food is to be enjoy all year around. I saw this recipe on Food Network , but I change it to fit my taste and also available ingredients. Go and give it a try, it only takes 20 minutes to make.

INGREDIENTS: Serves 4 people

  • 1 leek, thinly sliced
  • 1 carrot, thinly sliced
  • 2 small celery stalks, thinly sliced
  • 1 l veggie stock (use cubes as an option)
  • 2 tbsp shredded Parmesan
  • 6-7 strips dried smoked bacon
  • 2 wide strips lemon zest
  • 1 package refrigerated cheese tortellini
  • 3 tbsp oil
  • 1/2 cup fresh spinach
  • black pepper

PREPARATION

  1. Start by saute the vegetables for couple of minutes.
  2. Add the stock, lemon zest, cheese and pepper. Cover the pot and cook for 15 minnutes
  3. Meanwhile you can fry the bacon in a dry pan until it`s crispy. Chop with a knife and set aside
  4. Take the lemon zest out of the soup and drop the tortellini and spinach
  5. Cook for 2 more minutes and serve with strips bacon
