I have been making this recipe for years. It is super easy to make and put together in under 30 minutes. Using rotisserie chicken or even a leftover one will cut the cooking time. The pickled onions and radishes are my favourite way to give a kick to this creamy chicken, but also add a bit of crunch to it.
INGREDIENTS:
- 1 rotisserie chicken- meat removed off the bones and roughly chopped
- 1 small white onion, chopped
- 2 cups fresh mushrooms
- 2 cups cooking cream
- 1 tbsp English mustard
- 1 tbsp soy sauce
- 2 tbps olive oil
- black pepper to taste
- fresh parsley to serve
- Cooked rice to serve
For the pickled onions and radishes:
- one small red onion, sliced thinly
- handful radishes, halved
- 1/2 cup vinegar
- 1 tsp salt
- 1/2 cup sugar
- 1/4 cup water
PREPARATION:
- Start by mixing the ingredients for the pickles. Boil until the sugar dissolve, pour over the onions and radishes and let cool for 10 minutes
- In a large pan preheat the oil and saute the onions until translucent
- Add the mushrooms and cook until brown
- Add the chicken, cream, mustard, soy sauce and black pepper
- Cook until the sauce thickens
- Serve over rice with chopped parsley and pickled onions and radishes
