Creamy chicken with pickled onions and radishes

I have been making this recipe for years. It is super easy to make and put together in under 30 minutes. Using rotisserie chicken or even a leftover one will cut the cooking time. The pickled onions and radishes are my favourite way to give a kick to this creamy chicken, but also add a bit of crunch to it.

INGREDIENTS:

  • 1 rotisserie chicken- meat removed off the bones and roughly chopped
  • 1 small white onion, chopped
  • 2 cups fresh mushrooms
  • 2 cups cooking cream
  • 1 tbsp English mustard
  • 1 tbsp soy sauce
  • 2 tbps olive oil
  • black pepper to taste
  • fresh parsley to serve
  • Cooked rice to serve

For the pickled onions and radishes:

  • one small red onion, sliced thinly
  • handful radishes, halved
  • 1/2 cup vinegar
  • 1 tsp salt
  • 1/2 cup sugar
  • 1/4 cup water

PREPARATION:

  1. Start by mixing the ingredients for the pickles. Boil until the sugar dissolve, pour over the onions and radishes and let cool for 10 minutes
  2. In a large pan preheat the oil and saute the onions until translucent
  3. Add the mushrooms and cook until brown
  4. Add the chicken, cream, mustard, soy sauce and black pepper
  5. Cook until the sauce thickens
  6. Serve over rice with chopped parsley and pickled onions and radishes
