“I never met a chocolate I didn’t like.” – Deanna Troi

Chocolate is the ultimate cure for any mood. There is nothing more flavorful, rich and sweet than a bar of dark chocolate. As a foodie I never regretted any kind of food. With all my respect to the people who decided to go Vegan and create all this options for chocolate desserts without the contain of any chocolate, I live on a planet where chocolate is made by at least 70% real cocoa beans or it is milky and sweet, or it is white and rich, or it is with nuts and fruits, or with orange zest or with chili flakes…… Yes! Chocolate is as good as it gets. Today`s recipe is simple, yet delicious. It is for traditional Chocolate Mousse. You cant resist to this heavenly sweet with rich texture dessert. I dare you to try it and enjoy it without feeling any guilt, because life is too short to regret about the amount of chocolate we ate.

Ingredients (for 6 servings)

– 300g dark chocolate at least 70% cocoa

– 3 eggs

– 50g white sugar

– 1 tbs cocoa powder

– 300ml cream

– chocolate for serving and decoration

Preparation:

Place the chocolate in a heatproof bowl over a pan of simmering water. Stir until you get nice and glossy melted chocolate. Remove bowl from heat and set aside to cool slightly. In a separate bowl beat the eggs and sugar for 5 minutes, or until mixture is pale, thick and doubled in volume. Fold in cooled chocolate and cocoa powder until combined. IMPORTANT: Make sure you pour the eggs mixture into cooled chocolate to avoid cooking of the eggs! In a separate bowl, whip cream until thickened. Use a spoon to carefully fold the cream into the chocolate mixture, trying to keep the mixture as light as possible. Spoon into 6 serving glasses and chill in fridge for at least 1 hour. Remove from fridge then top with extra  grated chocolate to serve. Voilà!
