Made in the slow cooker these pulled pork sandwiches are something special. I cooked the meat in the slow cooker, together with smoked bacon and loads of spices and sauces. I choose to serve only with purple cabbage and carrots coleslaw so the real taste of the meat and juices is the star of the dish.
INGREDIENTS (serve about 6-7 sandwiches)
For the pulled pork
- 450 g lean pork
- 200 g smoked bacon
- 1 cup water
- 1/2 cup BBQ sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp sweet paprika
- 1 stick cinnamon
- salt and black pepper to taste
- 1 tbsp mustard powder
- 2 tbsp English mustard
- 1 onion chopped
- 3-4 garlic cloves chopped
- 1 tsp cumin powder
- 2 bay leaves
For the coleslaw
- 1 small purple cabbage
- 1 carrot
- 3-4 tbsp vegetable oil
- 3-4 tbsp vinegar
- salt to taste
PREPARATION
- Cut the bacon into small bits
- Mix everything for the pulled pork and coat the meat well with the spices and sauces.
- Cook in slaw cooker for 4 hours on high. Use fork to shred the meat. Remove the cinnamon stick and bay leaves
- For the salad shred carrots and cabbage and season
- Serve the sandwiches by cutting buns, top with the pork and add coleslaw
