Watermelon and feta is a combination from my childhood. My granddad will grow beautiful watermelons in his garden. We will go and pick one, then keep it in the fridge and wait to cool (the most difficult pat of all). When ready he will show us how to cut this giant fruit with one small, but very sharp knife used only for that purpose. We will then enjoy the cold slices garnished with salty cheese and often been told off by my nanna for spitting the seeds on the patio 🙂
My recipe today is a bit more sophisticated, but so delicious and refreshing. The key is really sweet and cold watermelon, which is not so difficult to find in the summer season. If you live in the UAE, try the fruit from Oman as they are so good right now.
Ingredients: (for 1 salad)
- 2 cups cubed watermelon
- 1/2 cup blueberries
- handful fresh mint leaves, chopped
- 1/2 avocado, sliced into cubes
- 50 grams feta or white Bulgarian cheese (my personal favourite)
- 1/2 lime, juiced
Preparation:
- Mix all the ingredients and season with the lime juice
- Serve immediately
