They are soft, chewy, sweet and absolutely fabulous. I mean who doesn`t like a good doughnut, right?! I used the recipe from Cupcake Jemma as she really knows her stuff. if you want to treat yourself some afternoon this recipe is a good one.
INGREDIENTS:
- 70 g butter
- 375 ml warm milk
- 50 ml warm water
- 2 tbsp yeast
- 50 g caster sugar
- 1 tsp salt
- 1/2 tsp nutmeg
- 2 eggs
- few drops vanilla extract
- 600 g white flour
- oil for frying
For the glazing
- 400 g sifted icing sugar
- few drops vanilla extract
- 80-90 ml warm water
PREPARATION:
- Start by mixing the water with yeast. Add a pinch of sugar to it and let it activate for 3-5 minutes
- In a big bowl mix the warm milk with butter, sugar, salt and yeast mixture, vanilla and eggs
- Sift in the flour and knead to a soft elastic dough
- Cover the dough and let it rise until it double in size
- Roll the dough into an inch thick and cut the doughnuts. Keep the holes 🙂
- Dust a little tray and let the doughnuts rest for another few minutes
- Preheat a small pan with loads of oil (at least 3 fingers)
- Start frying the doughnuts until golden in both sides
- Mix the glaze ingredients and dip each doughnut into it. Let it set (if you can) and enjoy it
