Doughnuts with vanilla glaze

They are soft, chewy, sweet and absolutely fabulous. I mean who doesn`t like a good doughnut, right?! I used the recipe from Cupcake Jemma as she really knows her stuff.  if you want to treat yourself some afternoon this recipe is a good one.

INGREDIENTS:

  • 70 g butter
  • 375 ml warm milk
  • 50 ml warm water
  • 2 tbsp yeast
  • 50 g caster sugar
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 2 eggs
  • few drops vanilla extract
  • 600 g white flour
  • oil for frying

For the glazing

  • 400 g sifted icing sugar
  • few drops vanilla extract
  • 80-90 ml warm water

PREPARATION:

  1. Start by mixing the water with yeast. Add a pinch of sugar to it and let it activate for 3-5 minutes
  2. In a big bowl mix the warm milk with butter, sugar, salt and yeast mixture, vanilla and eggs
  3. Sift in the flour and knead to a soft elastic dough
  4. Cover the dough and let it rise until it double in size
  5. Roll the dough into an inch thick and cut the doughnuts. Keep the holes 🙂
  6. Dust a little tray and let the doughnuts rest for another few minutes
  7. Preheat a small pan with loads of oil (at least 3 fingers)
  8. Start frying the doughnuts until golden in both sides
  9. Mix the glaze ingredients and dip each doughnut into it. Let it set (if you can) and enjoy it
