Tomatoes are among my favourite things to eat. Add some cheese to it and I am sold! This tart is very quick to make, but the flavors are just fantastic. If you find some colorful tomatoes like these you can impress your guests with the presentation.
INGREDIENTS (makes two tarts)
- 1 sheet ready made puff pastry (preferably square shape)
- 1 cup cottage cheese
- handful fresh basil
- zest of one lemon
- salt and pepper to taste
- 4 tomatoes
- 1-2 tbsp pomegranate molasses
PREPARATION
- Preheat your oven to 200 degrees C
- Roll your dough and cut into two rectangles
- Tuck the edges of the each rectangle
- Using fork poke few holes into the pastry (skip the edges)
- Bake until golden for about 15 minutes. If any large air bubble popped up while baking break them down. Let the pastry cool.
- In a bowl mix the cottage cheese, chopped basil leaves, salt, pepper and lemon zest
- Slice your tomatoes into thin circles
- Spread the cottage mix onto the tart shell, top with tomatoes, extra basil and finish it with pomegranate molasses
